Whose Ears are these!

It just keeps getting better and better with Alex. We bought the costume a month ago and thought there was no way he would out grow it. But the little man is quite a weed and just keeps growing! He barley fit into it but was happy enough in it to keep it on for quite a while. He went to three houses to trick-or-treat and did very well. He even was saying something that sounded a little like "trick-or-treat" at the end. And of course he always said thank you! Hope you all had a safe and wonderful night!

Going to the Big Apple

Tonight is Halloween and Alex is really excited... OK maybe we are really excited and it is rubbing off on the little guy! He does really love pumpkins and even says something that kind of sounds like it. I think it is "pum-pa"! He really lights up when he sees them! He will be dressed like a little dog tonight... if we can get him in the costume at all. Pictures, of course, will be fourth coming for sure!

Then on Friday morning we are off to New York. Holly is getting really excited. AJ will be spending the long weekend with his Grandparents up in Greeley, think kind thoughts for them! Everyone is a little nervouse but I am sure it will turn out just fine.

Another Snow Day :)


Well, we woke up to about 3 inches of snow and another 3-6 inches has dropped since then. It is also getting pretty windy. We all made it to work today and it is just beutiful looking out my window. Here are a few pics from my walk across campus to go to a meeting.

SNOW SNOW SNOW!!

Well we got our first snow of the year and I have been like a giddy school boy the friday before winter break! People have been teasing me non-stop for my perma grin and the sheer excitement I have about all of this. AJ really was tripped out by the whole thing. He really wanted to go outside but then never wanted me to put him down. He loved it when I through snow balls for Mulligan and she would jump in the air to catch them. Here are a few pics!

Soup De Jour!


OK. to give props to Joy the Vegan I thought I would post a recipe. No I have not joined the 4 other vegans in Denver but can appreciate their choice.

I made a rather simple soup that I guess I would call a Squash-Corn Chowder. Of course I don't really know what makes a chowder but it seems fitting.




Ingredients

2 Medium size yellow squash
1 Medium size zucchini
3/4 of a yellow onion
2 medium Yukon potatoes
1/2 of a red bell pepper
4-6 cloves of garlic
1 shallot
2 cups of corn
1/3 cup of whole milk
Cilantro
Paprika
Salt
Chicken Broth - 1 Qt
Butter
Olive Oil
shredded sharp Cheddar
avocado

Cooking Instructions

Dice the onion, garlic and shallot by hand and saute in large pot with olive oil
Soften potato till tender in about 3 cups of boiling water
Dice up bell pepper, squash and zucchini (food processor OK for this)
When onions are translucent add squash, bells and zuchs
continue to saute until all ingredients are soft
Add couple of pinches of salt at this point
Add potatoes and water they were in
Add chicken broth
Add about 1/2 of the corn
Bring to simmer and let it go, stirring frequently for about 1/2 hour.
Dice a handful of cilantro and add to soup
add about 1tsp of paprika

After about 45 minutes of total simmer time get out the old "boat motor" or use a blender and blend the crap out of it. You are looking for smooth but you don't want to loose the "texture". Add the milk and the rest of the corn

Simmer for another 10-15 minutes and taste for salt. Add as necessary

Garnish in bowl with cheddar, paprika, cilantro leaves and a thin slice of avocado

Enjoy!

Aside from about 1/3 of the ingrediants... it is almost Vegan!

Please don't confuse that with unpacked! Wow! What a crazy world. We have boxes everywhere but Holly is kicking butt to get them all emptied. Alex is back in day care and doing really well.
